Super easy gingerbread recipe

The festive season is finally here, so to get in the Christmas spirit let's bake some gingerbread cookies! Who's with me?

There's nothing quite as lovely as the smell of gingerbread filling your kitchen. 

This is one of my favourite things to do during the holiday season. They are not only yummy treats, but they are also perfect to create some Christmas tree decorations or make some gorgeous handmade presents to your friends and family.

What you will need:

 115g butter

4 tbsp golden syrup

150g light, soft brown sugar

300g plain flour

1 medium-sized egg

1tsp bicarbonate of soda( it's one sachet)    

4tsp ground ginger

2tsp ground cinnamon

1/4 tsp ground cloves

Icing:

I usually buy the icing sugar but if you prefer it to make it from scratch follow the below recipe:

1/2 cup (60g) powdered sugar

1 teaspoon to 1 tablespoon milk

1/8 teaspoon vanilla extract

How to make gingerbread biscuits:

1) Sift the flour, bicarbonate of soda and all the spices into a mixing bowl then stir together. 

Add the butter and gently rub it into the mix with your fingertips until your mixture is blended.No time to add the sugar.

2) Make a well in the centre, add the syrup and the egg. Mix all the ingredients together then use your hands to make a firm dough. Lightly flour your work surface and knead gently until the mix is smooth.  

3) Roll out your dough until it is roughly thickness of a £1 coin. Using cookie cutters cut out the shapes you would like.

4) Preheat the oven to 190°C (170°C fan).Bake the cookies until firm to the touch, about lightly golden brown around the edges. Once they are taken out of the oven leave them for about 5 mins on the tray then transfer them to a wire cooling tray to completely cool down.

5) It's time for the fun part. Once they all cooled, decorate them with icing sugar. If you are making your own icing sugar, just whisk together the powdered sugar, 1 teaspoon of the milk, and vanilla. Transfer the icing to a piping bag and let your creativity flow! 

Allow the icing about 10 minutes to set before eating.
