Two-Ingredient Vegan Ice Cream

This super tasty ice cream recipe is one of our favourites at home, we love to make it when the weather is sunny outside. It cannot be any easier than this, you only need 2 ingredients.
It's also perfect if you are looking for a new way to use up your ripe bananas, then banana bread or a banana smoothie. On top of that, it's gluten, dairy and sugar-free ice cream made with just two ingredients. Plus it's also vegan!

There are plenty of options with this ice cream, I followed this recipe with several other fruits too. Today I will be sharing our all-time favourite one, the peanut butter and banana ice cream.

Ingredients:


4 bananas, ripe
4 tbsp peanut butter

To decorate(optional):

Crushed walnuts

Instructions

Part 1

Slice the bananas and arrange on a baking tray covered with parchment paper or place them in a ziplock bag, squeeze out the air and seal it.
Place it in the freezer, I like to keep them in for overnight.
Remove the fruit from the freezer and transfer it to a blender. If you don't have a powerful blender, use a food processor. Blend for 1 min, scraping down the banana mixture with a spatula. Pulse for another minute until smooth.
Add in peanut butter and pulse until combined.
Pour the mix into a loaf tin cover with cling film and freeze for an hour.

Part 2

Remove it from the freezer, and serve immediately.
I decorated mine with crushed nuts and a piece of chocolate.
